Swedish Meatballs

ImageThis recipe is not like your usual Swedish Meatball recipes, so if you were to Google it, you wouldn’t get anything like this. This is my family’s twist on Swedish Meatballs and it is one of my favorite meals. This recipe is not too difficult and doesn’t have too many ingredients.

Makes about 5 servings


Mashed Potatoes-

-Box of Instant Mashed Potatoes

-Butter (amount according to box instructions)

-Milk (amount according to box instructions)

-Water (amount according to box instructions)

-Salt (amount according to box instructions)

Sauce and Meatballs-

-1 pound of Ground Beef

-2 tbsps. Adobo seasoning divided

-1 family size can of Cream of Mushroom Soup

-1 8oz. container of Sour Cream

-1 can of mushrooms


  1. In a medium size bowl combine ground beef and 1 tbsp. of Adobo. Then form them into small meatballs about the size of a Silver Dollar and place in a 10 inch frying pan and cook on Medium high until cooked all the way through.
  2. While cooking the meatballs combine cream of mushroom soup, sour cream, the remaining Adobo, and mushrooms in a medium saucepan on medium heat until sauce is thoroughly heated. Then place on medium low to keep hot.
  3. Place fully cooked meatballs in sauce and mix them together.
  4. Cook mashed potatoes according to box (make about 10 to 12 servings).
  5. On plates put mashed potatoes first and sauce on top and enjoy!

3 Ingredient Burger


This recipe is a recipe I have been using for a long time in my family. It contains only three ingredients (not including cheese if you are wanting a cheeseburger) and is quick and super easy to make. I absolutely love them and they never seem to go wrong!


Makes 4 hamburgers


-1 pound of ground beef
-About 3 tablespoons of Worcestershire sauce (I used Great Value)
-1 tablespoon of Adobo seasoning
-4 Slices American Cheese (Optional)


  1. Combine ingredients (except cheese) in a medium sized bowl (I usually combine them with my hands) and form into 4 equal sized patties.
  2. In a large skillet (10 to 12 inch) fry burgers for about 10 minute (about 5 minutes on each side) or until fully cooked.
  3. Turn off burner but don’t remove plan and place slices on top of burgers until melted.
  4. Serve on hamburger buns with desired toppings and sides and enjoy :)

Cheesy Chicken Bake



So last week I made this and it turned out great! I just randomly got this idea and it actually turned out even better than I thought. The great thing about this recipe is that it is pretty cheap, the most expensive think was the chicken.



  • 3 chicken breasts cubed(you can use less, I just like a lot of chicken)
  • 1 box of Velveeta mac and cheese ( I used the great value version from Walmart)
  • 1 can of diced tomatoes drained
  • 1 can of sliced mushrooms drained
  • 1 cup of shredded colby and monterey jack cheese
  • 6 cups of water
  • 1 tablespoon of Adobo (love, this stuff! It can be found in the Hispanic food section)
  • 1/2 tabelspoon of italian seasoning
  • 4 garlic cloves minced
  • 1 tablespoon of butter
  • 1 bag of frozen broccoli


  1. Preheat oven to 350 degrees and spray an 11×13 pan with cooking spray and set aside.
  2. Bring the 6 cups of water to a boil in a medium saucepan and stir in pasta. Cook pasta until tender and drain.
  3. While doing that, in a large skillet (I used 12 inch but it still was a little small) melt butter on med-high and add in chicken, garlic, and seasonings. Cook chicken until completely white.
  4. Then add mushrooms and cook for about 2 minutes until mushrooms are hot. 
  5. Next, Stir in broccoli and diced tomatoes cover and cook for about 10 minutes or until broccoli is tender. Then drain if needed.
  6. Add pasta back into the saucepan and stir in cheese packet until it covers all of the pasta.
  7. In a large bowl, mix together mac and cheese and chicken and vegetable mixture. 
  8. Pour mixture into 11×13 pan and top with cheese and bread crumbs.
  9. Bake in oven for 15 to 20 minutes.
  10. Serve and enjoy!

Oreo Pancakes – Boyfriend Approved!

Oreo Pancakes2A few days ago I realized that I had so many ingredients left over from my cupcakes and I didn’t know what to do with them, then I thought, what about pancakes? Pancakes would be perfect because my boyfriend and I were going to go to Busch Gardens and I wanted a nice breakfast to start off the day. Since my boyfriend loves Oreos, that’s the kind I went with. This breakfast is perfect for a sweet tooth in the morning, but beware! If you eat too much of it you may get a tummy ache. So these pancakes not only have Oreos in them but I also made a chocolate pancake syrup that I found on the Hershey’s website to put on top – talk about a chocolate heart attack! Now I didn’t eat these myself but according to my boyfriend they were awesome!



  • 6 Oreos
  • 1 cup of flour
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 2 tbsp. sugar
  • 1 egg
  • 2 tbsp. unsalted butter melted
  • 1 cup milk
  • 1 tbsp. butter or margarine

Chocolate Pancake Syrup

  • 1/2 cup maple syrup
  • 1/2 cup chocolate syrup


(makes 4 small pancakes)

  1. In a large bowl combine egg and melted unsalted butter. Then mix in dry ingredients.
  2. Next, mix in milk and stir until smooth (it’s OK if it has a few lumps).
  3. Then crush Oreos in a baggy using whatever item you have on handy (rolling pin, meat tenderizer, bowl, cup, etc.).
  4. Mix crushed oreos into pancake batter.
  5. In a 8 inch or 10 inch skillet melt the tablespoon of butter or margarine on medium-high heat.
  6. Add in 1/4th of the batter  (about 1/2 to 3/4 cup) in pan in the shape of a circle.
  7. Cook until starts bubble and sides are starting to cook and then flip and cook the other side until golden (should only be a few minutes on each side).
  8.  Repeat steps 6-7 with the rest of the batter.
  9. Mix together maple syrup and chocolate syrup and pour over pancakes and serve. Store leftover syrup in a container with a lid in the fridge.

Oreo Vanilla Cupcakes with Strawberry Cream Cheese Icing


Okay, so I randomly decided I wanted to make cupcakes because I love to bake! This recipe isn’t really an expensive one but it can add up if you don’t have some of these ingredients at home. The good thing about it is once you buy some of these ingredients you won’t have to buy them for a while and are great to have around if you want to bake something, these ingredients include: flour, sugar, powdered sugar, and baking powder.

For this recipe I kind of just took a basic cupcake and frosting recipe and I just spruced it up some. The reason I decided to go with Oreos is because my boyfriend loves them! And when I say he loves them, I mean if Oreos are on it he wants it, he would probably even eat pizza with Oreos on it if he could! And I love strawberries and I love cream cheese so I decided to make strawberry cream cheese icing; it’s the best of both worlds! My boyfriend gets what he wants and I get what I want. (Just a forewarning, the frosting makes quite a bit so there may be leftovers because there was with mine.)


Cupcake mix:

½ cup softened butter

¾ cup pure cane sugar

2 eggs

2 tsp. pure vanilla extract

½ tsp. baking powder

¼ tsp. salt

2/3 cup of milk

20 Oreos divided (12 to place at the bottom and 8 to crush inside)

12 cupcake liners


8 ounces of soften cream cheese

4 ounces of soften unsalted butter

2 cups powdered sugar

1 tsp. pure vanilla extract

4 strawberries


Chocolate syrup and mini Oreos for decoration


1. Preheat oven to 350 degrees.

2. In cupcake pan place in the cupcake liners and put an Oreo at the bottom of each and set aside.

3. (Now we are going to make the cupcake batter so we will be using those ingredients.) In a large bowl combine softened butter and sugar with an electric mixer on low speed. Then add the eggs one at a time, beating on low until well mixed after each egg. Then stir in the vanilla extract.

4. Next, in separate bowl combine flour, baking powder and salt then pour into the butter-sugar mixture and beat on low with mixer until completely combined. Then add the milk and mix on low mixer until smooth.

5. In a plastic baggy crush 8 Oreos with whatever you have on hand to crush with, I used a metal measuring cup but you could use a meat tenderizer or even a bowl, until there are no more chunks and stir into cake mix.

6. Fill each cupcake liner about to the top or just evenly distribute it based on how much batter you have.

7. Place in the oven for 20-25 minutes or until golden, when they are done them set them out to cool.

8. While the cupcakes are cooling, we are going to make the icing. Rinse strawberries and cut of green leaves and slice into smaller pieces. Put the pieces in a blender until they become a puree and there are no more chunks.

9. Then in a bowl combine softened cream cheese and softened butter with an electric mixer on low. Then mix in the powdered sugar, one cup at a time until smooth and then stir in vanilla extract.

10. Next take the strawberry puree and mix into frosting mixture with mixer on low until well mixed (You may need to put the frosting in the fridge for a little bit to thicken up).

11. When cupcakes are cool spread on frosting or use a pastry bag and a frosting tip. Top with chocolate syrup and mini Oreos if desired and enjoy!

Upgraded Kraft Mac & Cheese

kraft upgradedKraft mac and cheese is cheap and yummy but sometimes it can get a little tiring eating the same thing over and over again so I decided to make an upgraded version. It’s really easy to do and cheap :)


  • 1 slice of bread
  • box of mac and cheese
  • 1/4 cup of shredded cheese (any kind will do, I used fiesta blend)
  • 1/4 cup of milk
  • 6 cups of water
  • 4 tbsp. butter or margerine
  • 1 tsp. Italian seasoning
  • 1 tsp. garlic powder


1. Preheat oven to 375 degrees.

2. Cut the slice of bread into 1/4 inch slices and bake in oven for about 15 minutes or until golden brown and set aside and let cool.

3. Prepare mac and cheese according to box instructions.

4. Next put cooled bread slices into a plastic bag with garlic and Italian seasoning and crush into bread crumbs.

5. Mix shredded cheese into mac and cheese until melted and then sprinkle in bread comes and viola! Upgraded mac and cheese :)

My Famous Tuna Recipe

So ever since my grandma showed me a different way to make tuna for my tuna sandwiches I haven’t gone back to the just tuna and mayo. I have made it for my boyfriend and he loves it! He doesn’t eat it any other way!

So here is the recipe: (Makes 2 sandwiches)


  • Mayonnaise 1 1/2 to 2 tbsp
  • Salt & Pepper
  • Garlic Powder
  • A can of tuna drained
  • 4 slices of bread
  • Shredded Colby and Monterey Jack cheese or fiesta blend cheese- about 4 tbsp
  • Dill relish 1 to 2 tbsp (or 4-6 dill pickle chips chopped)


1. In a bowl combine all of the ingredients (except for the bread) and mix with a spoon or fork.

2. Spread half of the mixture on one slice of bread and the other half of the mixture on another. Top each slice with another slice of bread.

3. Serve with chips and enjoy! :)
